Recently have been told I look like Mary Ann from Gilligan's Island. I hadn't heard that in years, but that is a good place to start as to what I look like, although she had a better bod. I have three boys and have been married for 13 years. Born of a Navy family, in Hawaii, one Mom, one Dad, one sister and one brother. The eldest of three children. BS in Applied Mathematics. Consider Pensacola my home town although I moved every 2-3 years of my life growing up. Currently work in the aerospace industry in an engineering position while being a Mom. Of Celtic heritage and very proud of it.

Carnival of the Recipes

GRR!!! I was distracted and forgot to Post this! I try to do it on Wednesday so Beth of SWWBO gets it nice and early and not right under the wire. Sorry Beth!!!

Sauteed Mushrooms
(I serve this with steak)

2Tablespoons Butter
1/4 Cup diced red onion
4 Cloves garlic
8 oz whole baby portabella mushrooms (fresh/packaged)
1/4 Marsala cooking wine or cooking Sherry
1/2 tsp seasoned salt

Steps:

  • Preheat large saute pan on medium for 2-3 minutes
  • Add butter and onions to pan. Crush garlic using a garlic press into pan, cooking a minute or two or until browned.
  • Stir in mushrooms, wine and seasoned salt. Reduce heat to medium. Cover and cook, stirring occasionally, 5 minutes.

In my family, this serves two adults. I love mushrooms!
